Sotol is a distilled spirit native to northern Mexico (especially Chihuahua but also Durango and Cuahuila) made from the wild Dasylirion plant not cultivated agave, which is what tequila and mezcal are made from. It holds deep cultural, ecological, and historical significance, evolving from indigenous fermentation practices to its modern status as a protected Denomination of Origin spirit. And it’s a really strong plant that survives harsh conditions like heat and drought.
